Finca Ayles Unexpected Garnacha

Varietal: Garnacha

Climate: Extreme continental microclimate.

Vineyards and Viticulture: Situated at 650 meters above sea level, with significant temperature swings between day and night. Clay-limestone soils with excellent water retention. Canopy and cover crop management. Organically farmed vineyard with nighttime harvest.

Winemaking: Cold pre-fermentation maceration. Temperature-controlled fermentation with indigenous yeasts. The wine is then aged for 6 months in French oak barrels.

Ruby red in color. On the nose, aromas of red and black fruits—blackberries and raspberries—intertwined with spicy notes and subtle hints of cocoa from the oak aging. On the palate, it is full-bodied and rounded, with a persistent and elegant finish.

Pairing: Perfect with red meats, grilled meats, ternasco (young lamb), cured sausages such as longaniza, Iberian ham, and medium-aged cheeses (excluding blue cheeses).
